Onions (Allium cepa), also known as the bulb onion, common onion and garden onion, are normally available in yellow, red, and white varieties on PEI. Onions are a cool season crop - ideal for PEI.
Onion consumption in Atlantic Canada is traditionally high and is often grown by farmers producing other vegetables.
Onions are often chopped and used as an ingredient in various hearty warm dishes, and may also used as a main ingredient. They are also used raw in cold salads. Onions pickled in vinegar are eaten as a snack. Fresh onion has a pungent, persistent, even irritating taste, but when sauteed, onion becomes sweet and much less pungent. PEI Onions contain Vitamin C, potassium and calcium plus trace amounts of other nutrients.
