Annabelle Oven Spicy Fries with a Lemon Lime Mayo by Chef Alain Bosse and WP Griffin Inc.

(Serves 2 to 4)

Ingredients:

  • 5 Annabelle potatoes

  • 2 oz (57 g) canola oil

  • ½ tsp (2 ml) dry crushed chili pepper

  • Coarse sea salt to taste

Slice your potato length-wise and then into French fries about ½ inch thick. Toss them into a bowl with the oil, chili pepper and salt. Place them on a cookie sheet lined with parchment paper and bake in a pre-heated oven 400f (205c) for 30 to 35 minutes until golden brown. Sprinkle with sea salt and serve with your favorite condiment. I suggested the lemon lime mayo to help balance the fries.

Lemon Lime Mayo

  • 3 tbsp (45 ml) real mayonnaise

  • 1 lemon, juice only

  • 1 lime, juice only

In a small bowl mix the three ingredients. Serve with the fries.

Simple, easy and great for a last minute snack.
