Recipes & Cooking Tips

Ingredients:

  • 1 rack of PEI pork ribs-meat will fall off bone

  • 5 medium PEI homegrown beets

  • 2 grated PEI homegrown carrots

  • 1 onion

  • 4-5 cups PEI homegrown yellow beans chopped

  • 5 or 6 PEI potatoes finely cubed

  • 1 cup tomato juice

  • Salt and pepper to taste

  • Optional: 2 sprigs dill

  • Optional: 1 Tbsp. Sour Cream

Directions:

Bring ribs to a boil and skim till clear; reduce heat to medium

Add beets and cook for 30 minutes

Add carrots, yellow beans, potatoes, onion

Cook for 30 minutes and reduce heat to simmer

Add tomato juice

Optional- add 2 sprigs chopped dill

Remove rib bones

Add Salt and pepper to taste.

*A tablespoon of sour cream can be added to each bowl
