Oven Roasted Annabelle by Chef Alain Bosse and WP Griffin Inc.

(Serves 6 to 8)

Ingredients:

  • 3 lbs (1.5 kg) Annabelle potatoes

  • 2 oz (57 g) olive oil

  • ½ cup (125 ml) brown sugar

  • 1 tsp (5 ml) sea salt

  • 1 tsp (5 ml) milled black pepper

  • 1 tsp (5 ml) smoked paprika

Cut each potato into 3 thick slices and in a large bowl, place the oil, brown sugar, sea salt, pepper, and smoked paprika. Toss with your hands to ensure you get every piece covered.

In a 9 X 13 glass baking dish, spread the potatoes and bake in a pre-heated oven 375F (190 c) for approximately 40 to 50 minutes. Flip your potatoes once or twice during the cooking process to make sure the potatoes are golden brown on both sides.
