Ingredients:

  • 1 package of "spring mix salad greens" or "fresh herb flavoured greens"

  • Several small PEI carrots cut in circles

  • 1/4 to 1/2 red pepper and yellow pepper cut in long slivers

  • Cucumber rings finely cut 3 inches

  • Freshly podded peas

  • 2 bunches of cauliflower cut or broken into small flowerets

Directions:

In a large salad bowl, mix the above ingredients. Top with PEI raw beet rings or coils. Raspberry vinaigrette tops this salad or your dressing of choice.

Makes a salad for 6-8.
